– 3 large eggs, separated
– 1/2 cup granulated sugar
– 8 ounces mascarpone cheese, softened
– 1 cup heavy cream
– 1 cup brewed espresso or strong coffee, cooled
– 24-30 ladyfinger cookies (savoiardi biscuits)
– Cocoa powder, for dusting


1. In a large mixing bowl, beat the egg yolks and sugar until pale and creamy.
2. Add the softened mascarpone cheese and beat until smooth.
3. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
4. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
5. In a shallow dish, mix the brewed espresso or coffee.
6. Quickly dip each ladyfinger into the coffee mixture and line the bottom of a dish with a single layer.
7. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of soaked ladyfingers and mascarpone mixture.
8. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
